პასკა (ოჯახური რეცეპტი)
აღდგომის დღესასწაულის წინ საკონდიტროები ერთმანეთს ეჯიბრებიან პასკის ცხობაში, მეტიც - ზოგჯერ ქვეყნებიც კი ერთვებიან ამ შეჯიბრებებში საკუთარი ნაცნიონალური პასკის სახელით მონათლულის უკეთ წარმოსაჩენად, მაგრამ რაც დრო გადის, ყველა აცნობიერებს რომ საუკეთესო შედეგი, მაინც ქველინარიის ექსკლუზიურ რეცეპტს ან ტრადიციული მეთოდით მომზადებულ ოჯახურ პასკას აქვს!
შემადგენლობა:
- ფქვილი - 2,8-3 კგ;
- კვეცრხი - 10 ;
- შაქარი - 1,5 კგ;
- რძე - 1 ლ;
- კარაქი - 400 გრ;
- არაჟანი - 300 გრ;
- მაწონი - 400;გრ
- საფუარი - 3-4 ს/კ;
- ზეთი - 200 მლ;
- ქიშმიში - 500-800 გრ (როგორც თქვენ გიყვართ);
- მუსკატი - 3 ცალი;
- ილი - 30-40 ცალი;
- მიხაკ-დარიჩინი თქვენი გემოვნებით;
- მარილი და ვანილი გემოვნებით;
- ლიმონის ცედრა - 3-4 ცალი.
მომზადება:
- 10 კვერცხის გულისგან გააკეთეთ გოგლიმოგლი, დაუმატეთ 500 გრ შაქარი (ცილას შეინახეთ);
- 900მლ ცხელ რძეში გახსენით 1 კგ შაქარი და 400გრ კარაქი + ცოტა მარილი;
- 100მლ თბილ რძეში გახსენით 3-4 ს/კ საფუარი + 1 ჩ/კ შაქარი + 100 გრ ფქვილი და დადგით ასაფუებლად (თუ დროჟი კარგია მალე ამოფუვდება);
- მომზადებულ გოგლიმოგლში აურიეთ 300 გრ არაჟანი და 400 გრ მაწონი;
- შენახული ათი კვერცხის ცილა ათქვიფეთ უშაქროდ გამაგრებამდე, დაამატეთ ვანილი;
- ზემოთ ჩამოთვლილუ სამი მასა (გოგლიმოგლი/რძე/საფუარი) გადაურიეთ ერთმანეთში და ბოლოს ძალიან ფრთხილად შეურიეთ მზა ბეზე;
- დადგით ასაფუებლად;
- ამოსული მასა ჩაზილეთ 200მლ ზეთთან ერთად და შეაზილეთ 2,8-3 კგ_მდე ფქვილი (თუ ფქვილი კარგია სამი კილო არ დასჭირდება)
- ეს მასა რომ ამოფუვდება, ჩააყარეთ ფქვილში ამოვლებული 500-დან 800 გრამამდე შავი ქიშმიში, ასევე, დაამატეთ სანელებლები:
- სამი ცალი მუსკატის კაკალი + შაფრანი + 30-40 ცალი ილი, ცოტა მიხაკ-დარიჩინი. ეს ყველაფერი დაფქვით (დაფქვილებიც იყიდება) და დაამატეთ 3-4 ცალი ლიმონის ცედრა და დაასხით კონიაკი (სურნელოვანი სანელებლების დასათრობად)
- და ჩაზილეთ;
- დაელოდეთ ამოფუებას და შემდეგ გადაიტანეთ ფორმებში და გამოაცხვეთ.
რაოდენობები: 400-500 გრ. ფორმებში გამოდის - 13 ცალი; ხოლო, 800-900 გრამიან ფორმებში - 6-7 ცალი;
